There are several things you can do with your left over’s that won’t have you eating Thanksgiving dinner all week!!
Whether you have a ton of Turkey or Mash Potatoes there’s always something you could do with it! Here are a few of my person favorites…
1. Mexican Style Enchilada’s with leftover Turkey: Simply buy a packet of Enchilada Seasoning and follow the directions on the back. Use your left-over Turkey instead of Chicken. I recommend layer all the ingredients in a pan for a super easy Enchilada casserole. So much easier then rolling each individual tortilla!!
2. Sheppard’s/Pot Pie: Simply buy a frozen Pie Crust, precook it for a few minutes, throw in some Turkey, green bean casserole, cooked veggies, stuffing, whatever you have. Pour gravy or it and Top with Mash Potatoes, bake until hot. Serve with extra gravy and a side of Cranberry sauce. So good!!
3. Easy Turkey Sandwich: Throw some Mayonnaise and cold Turkey on a roll… Perfect for a quick snack! (Zest it up with a drop of Cranberry sauce!)
4. Mash Potato Casserole: Brown 1lb ground beef, add a little chopped green peppers & onions, a can of corn if you like. Throw it together in pan and top with left over mash potatoes. Bake until hot. I recommend adding cheese the last few minutes of baking. Serve with Salsa or ketchup which ever taste you prefer!
So really in my opinion, pretty much anything you can make with Chicken you can make with leftover Turkey. Be creative and experiment with it! Other idea’s to try with leftover Turkey are things like Turkey Chili, Turkey Noodle Soup, Turkey Tacos, Burritos, Nacho’s, the list is endless!!!
Sides are important to!! Try some Fried Potato Pancakes with left over Mash potatoes or sweet potatoes! Cranberry Salsa is yummy and easy to make! Sweet potatoes wantons are delish as well!!
It doesn’t matter if you spent all day cooking it or if you were sent home with it; don’t let it go to waste!
